Description

  • 2 pounds ground beef (80–90% lean)
  • 1/2 cup panko breadcrumbs
  • 1/3 cup beef broth
  • 2 large eggs, whisked
  • 3 tablespoons fresh parsley, finely chopped
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons ketchup
  • 1 1/4 teaspoons kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2/3 cup ketchup or BBQ sauce (for glaze)
  • 3 tablespoons light brown sugar (for glaze)


Instructions

  1. Preheat the oven to 375°F (190°C) and line a 9×5-inch loaf pan or baking sheet with foil. Lightly grease it with non-stick spray.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, beef broth, eggs, parsley, Worcestershire sauce, ketchup, salt, pepper, garlic powder, and onion powder. Mix gently until just combined.
  3. Transfer the mixture to the prepared pan and shape it into a loaf without pressing too firmly.
  4. In a small bowl, mix the ketchup or BBQ sauce with brown sugar to create the glaze. Spread evenly over the top of the meatloaf.
  5. Bake for 45 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Remove from the oven and let the meatloaf rest for 10 minutes before slicing and serving.
