Ingredients
Scale
- 2 pounds ground beef (80–90% lean)
- 1/2 cup panko breadcrumbs
- 1/3 cup beef broth
- 2 large eggs, whisked
- 3 tablespoons fresh parsley, finely chopped
- 2 tablespoons Worcestershire sauce
- 2 tablespoons ketchup
- 1 1/4 teaspoons kosher salt
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2/3 cup ketchup or BBQ sauce (for glaze)
- 3 tablespoons light brown sugar (for glaze)
Instructions
- Preheat the oven to 375°F (190°C) and line a 9×5-inch loaf pan or baking sheet with foil. Lightly grease it with non-stick spray.
- In a large mixing bowl, combine the ground beef, breadcrumbs, beef broth, eggs, parsley, Worcestershire sauce, ketchup, salt, pepper, garlic powder, and onion powder. Mix gently until just combined.
- Transfer the mixture to the prepared pan and shape it into a loaf without pressing too firmly.
- In a small bowl, mix the ketchup or BBQ sauce with brown sugar to create the glaze. Spread evenly over the top of the meatloaf.
- Bake for 45 minutes, or until the internal temperature reaches 160°F (71°C).
- Remove from the oven and let the meatloaf rest for 10 minutes before slicing and serving.
Notes
- Do not overmix the meat mixture to keep the meatloaf tender.
- Use a meat thermometer to ensure accurate doneness at 160°F.
- You can substitute ground turkey for a leaner version, though it may be less juicy.
- Sauté fresh onions and garlic if using instead of powders for deeper flavor.
- Let the meatloaf rest before slicing to retain juices.
- Leftovers can be stored in the refrigerator for up to 5 days.
