Instructions

  1. Heat olive oil in a skillet over medium heat and cook the red onion and garlic until softened and fragrant.
  2. Add fresh spinach to the skillet and cook until wilted. Remove excess moisture if needed to keep the quesadillas crispy.
  3. Combine the cooked spinach mixture with feta cheese, mozzarella cheese, oregano, and black pepper.
  4. Place a tortilla on a flat surface and spread the filling evenly over one half of the tortilla.
