Ingredients
Scale
- 4 large flour tortillas: creates the crispy outer layer and holds the filling together
- 2 cups fresh spinach: adds nutrients, color, and a mild earthy flavor
- 1/2 cup feta cheese: provides a tangy Mediterranean flavor and creamy texture
- 1 cup shredded mozzarella cheese: creates a smooth, melty cheese filling
- 1/2 medium red onion, thinly sliced: adds sweetness and savory depth
- 2 cloves garlic, minced: enhances the overall flavor with a fragrant aroma
- 1 tablespoon olive oil: helps cook the vegetables and adds Mediterranean richness
- 1 teaspoon dried oregano: adds classic Mediterranean seasoning
- 1/4 teaspoon black pepper: balances and enhances the flavors
- Fresh herbs (optional): adds freshness and brightness to the filling
Instructions
- Heat olive oil in a skillet over medium heat and cook the red onion and garlic until softened and fragrant.
- Add fresh spinach to the skillet and cook until wilted. Remove excess moisture if needed to keep the quesadillas crispy.
- Combine the cooked spinach mixture with feta cheese, mozzarella cheese, oregano, and black pepper.
- Place a tortilla on a flat surface and spread the filling evenly over one half of the tortilla.
- Fold the tortilla in half and cook in a heated skillet until golden and crispy on both sides and the cheese is melted.
- Remove from heat, allow the quesadilla to rest briefly, then slice into wedges and serve warm.
Notes
- Drain cooked spinach well before assembling to prevent soggy tortillas.
- Do not overfill the tortillas because they may become difficult to flip.
- For extra flavor, add roasted red peppers, olives, mushrooms, or sun-dried tomatoes.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in a skillet, oven, or air fryer for the best crispy texture.
