- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened

- 2 large eggs
- 1 tablespoon lime zest

- 2 tablespoons fresh mint leaves, finely chopped
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in vanilla extract, lime zest, and lime juice until combined.
- Fold in finely chopped mint leaves.
- Gradually add dry ingredients to the wet mixture and mix until a soft dough forms.
- Scoop dough into 1-inch balls and place on prepared baking sheet.
- Flatten slightly with your hand or a glass.
- Bake for 10–12 minutes until edges are set and centers remain soft.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use fresh lime zest and mint for the best flavor.
- Do not overbake; cookies should remain soft in the center.
- Chill dough for 20–30 minutes if it feels too soft.
- Store in an airtight container for up to 3 days.
- Dough can be frozen for up to 2 months.
