Ingredients
Scale
- 130 g (1 cup / 4 1/2 oz) all-purpose flour
- 40 g (1/3 cup / 1 1/2 oz) black cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 113 g (1/2 cup / 4 oz / 1 stick) unsalted butter, melted
- 100 g (1/2 cup / 3 1/2 oz) granulated sugar
- 100 g (1/2 cup / 3 1/2 oz) packed brown sugar
- 2 large eggs, at room temperature
- 2 teaspoons vanilla extract
- 180 ml (3/4 cup) buttermilk
- 226 g (1 cup / 2 sticks) unsalted butter, softened
- 325 g (2 1/2 cups / 11 1/2 oz) powdered sugar, sifted
- 180 g (1 cup / 6 1/2 oz) white chocolate
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- Gel food coloring, as needed
- Candy eyes, as needed
Instructions
- Preheat the oven to 350°F (180°C), or 320°F (160°C) for a fan-forced oven. Line a standard muffin pan with 12 cupcake liners.
- Sift the flour, black cocoa, baking soda, baking powder, and salt into a bowl. Whisk until evenly combined and set aside.
- In a separate mixing bowl, beat the melted butter, granulated sugar, and brown sugar until smooth.
- Add the eggs one at a time, beating well and scraping down the bowl after each addition. Mix in 2 teaspoons of vanilla extract.
- Fold one-third of the dry ingredients into the butter mixture until just combined. Gently mix in half of the buttermilk.
- Repeat with another third of the dry ingredients, the remaining buttermilk, and finally the remaining dry ingredients. Mix only until combined to avoid dense cupcakes.
- Divide the batter among the cupcake liners, filling each about two-thirds full.
- Bake for 18 to 20 minutes, rotating the pan halfway through for even baking. The cupcakes are ready when a skewer inserted into the center comes out with one or two moist crumbs.
- Cool the cupcakes in the pan for 5 minutes, then transfer them to a wire rack and allow them to cool completely.
- For the frosting, melt the white chocolate in the microwave in 30-second intervals, stirring well after each interval. Allow it to cool before adding it to the buttercream.
- Beat the softened butter and powdered sugar for 5 to 6 minutes until very pale, light, and fluffy.
- Add the milk and 1 teaspoon vanilla extract and beat until fully incorporated.
- Add the cooled melted white chocolate and beat on medium-high speed for about 3 minutes until smooth, thick, and creamy.
- Divide the frosting between 3 or 4 bowls and tint each portion with the desired gel food coloring.
- Pipe or spread the colored buttercream over the completely cooled cupcakes. Add candy eyes to create playful monster faces and serve.
Notes
- For the most accurate results, weigh flour, sugar, cocoa, and other ingredients when weights are provided.
- Dutch-process cocoa can be substituted for black cocoa, although the cupcakes will have a lighter color.
- Do not overmix the batter after adding the flour or the cupcakes may become dense and tough.
- All ovens vary, so begin checking the cupcakes 2 to 3 minutes before the suggested baking time.
- Allow the melted white chocolate to cool before adding it to the buttercream so the frosting does not become too soft.
- Gel food coloring works best because it creates vibrant colors without thinning the frosting.
- A grass piping tip or small open-star tip can be used to create furry monster textures.
- Store Monster Cupcakes in an airtight container in the refrigerator for 4 to 5 days. Bring them to room temperature before serving.
- The decorated cupcakes can remain at a cool room temperature for up to 24 hours.
