Description

Mulberry Crumble Bars are buttery, fruity dessert bars made with fresh mulberries, rolled oats, brown sugar, and a crisp crumble topping.   • 3 cups fresh mulberries
  • 2 tablespoons granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
  • 3 cups all-purpose flour
  • 3 cups rolled oats
  • 1 1/2 cups brown sugar, loosely packed
  • 1 1/2 cups melted butter
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a medium bowl, combine the fresh mulberries, granulated sugar, 2 tablespoons flour, cornstarch, and lemon juice. Stir gently until evenly coated and set aside.
  3. In a large mixing bowl, combine 3 cups flour, rolled oats, brown sugar, baking powder, and salt.
  4. Pour the melted butter into the dry mixture and stir until a crumbly texture forms.
  5. Press two-thirds of the crumble mixture firmly into the bottom of the prepared baking pan to create the crust.
  6. Spread the mulberry filling evenly over the crust, including any accumulated juices.
  7. Sprinkle the remaining crumble mixture evenly over the top of the berries.
  8. Bake for 40 minutes or until the topping is golden brown and the filling is bubbling around the edges.
  9. Allow the Mulberry Crumble Bars to cool completely before slicing into squares and serving.

Notes

  • Store the bars in an airtight container at room temperature for up to 2 days or refrigerate for up to 1 week.
  • Frozen mulberries may be used, but add extra cornstarch if the filling seems too watery.
  • For cleaner slices, chill the bars in the refrigerator before cutting.
