Description

Mushroom Alfredo is a creamy, comforting pasta dish made with sautéed mushrooms, garlic, butter, and a rich parmesan Alfredo sauce. Perfect for a quick and satisfying meatless dinner, this recipe delivers deep flavor and a silky texture in just about 20 minutes.

  • 12 ounces fettuccine pasta
  • 1 pound mushrooms (button, cremini, or portobello), sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/8 teaspoon grated nutmeg or 1/2 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Clean the mushrooms with a paper towel and slice them evenly.
  2. Heat olive oil in a large skillet over high heat, then add mushrooms, salt, and pepper. Cook for 5–7 minutes until browned and moisture evaporates.
  3. Add butter and minced garlic, sauté for 1 minute until fragrant.
  4. Meanwhile, cook the pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
  5. Pour heavy cream into the skillet and simmer for about 5 minutes until slightly thickened.
  6. Turn off the heat and stir in grated parmesan cheese and nutmeg or lemon zest until smooth.
  7. Add the cooked pasta to the sauce and toss well to coat. Add reserved pasta water if needed to loosen the sauce.
  8. Serve immediately, garnished with chopped parsley and freshly ground black pepper.

  • Brown the mushrooms well to enhance flavor and avoid a watery sauce.
  • Add parmesan cheese off the heat to prevent clumping.
  • Use reserved pasta water to adjust sauce consistency.
