Ingredients

Instructions

  1. Heat a non-stick skillet over medium heat and add olive oil. Add sliced mushrooms and sauté for 3–4 minutes until browned and tender.
  2. Stir in minced garlic if using, and cook for another 30 seconds until fragrant.
  3. Add spinach and stir until just wilted, about 1 minute.

  5. Stir gently and slowly with a spatula on low heat, forming soft curds. Cook until eggs are just set but still glossy.
