Description

This Nectarine and Mascarpone Tart combines a tender almond-flour crust with a creamy mascarpone filling and fresh nectarines tossed in lemon juice and sugar. The result is a light, elegant summer dessert with the perfect balance of sweetness, richness, and bright citrus flavor.

Ingredients

Scale
  • 1/2 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, cold and cubed
  • 2 tablespoons cold water
  • 4 ounces mascarpone cheese
  • 1/4 cup sweetened condensed milk
  • 1 tablespoon lemon juice (for filling)
  • 2 medium nectarines, thinly sliced
  • 1 tablespoon granulated sugar (for nectarines)
  • 1 teaspoon lemon juice (for nectarines)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine the almond flour, all-purpose flour, sugar, and salt.
  3. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
  4. Add the cold water and mix just until a dough forms.
  5. Place the dough on a parchment-lined baking sheet and roll it into a round circle.
  6. Fold and crimp the edges slightly to create a rustic tart shell.
  7. Bake for 15 minutes or until lightly golden. Remove from the oven and allow the crust to cool completely.
  8. In a small bowl, combine the mascarpone cheese, sweetened condensed milk, and 1 tablespoon lemon juice until smooth.
  9. Spread the mascarpone mixture evenly over the cooled tart shell.
  10. In a separate bowl, toss the sliced nectarines with 1 tablespoon sugar and 1 teaspoon lemon juice.
  11. Arrange the nectarine slices over the mascarpone filling.
  12. Drizzle any remaining nectarine juices over the tart.
  13. Serve immediately or chill briefly before serving.

Notes

  • Use ripe but firm nectarines for the best texture and flavor.
  • Allow the tart shell to cool completely before adding the mascarpone filling.
  • Keep the butter and water cold to achieve a tender crust.
  • Peaches, plums, or apricots can be substituted for nectarines.
  • For a richer flavor, chill the assembled tart for 30 minutes before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
