Ingredients
Scale
- 1/2 cup almond flour
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter, cold and cubed
- 2 tablespoons cold water
- 4 ounces mascarpone cheese
- 1/4 cup sweetened condensed milk
- 1 tablespoon lemon juice (for filling)
- 2 medium nectarines, thinly sliced
- 1 tablespoon granulated sugar (for nectarines)
- 1 teaspoon lemon juice (for nectarines)
Instructions
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, combine the almond flour, all-purpose flour, sugar, and salt.
- Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
- Add the cold water and mix just until a dough forms.
- Place the dough on a parchment-lined baking sheet and roll it into a round circle.
- Fold and crimp the edges slightly to create a rustic tart shell.
- Bake for 15 minutes or until lightly golden. Remove from the oven and allow the crust to cool completely.
- In a small bowl, combine the mascarpone cheese, sweetened condensed milk, and 1 tablespoon lemon juice until smooth.
- Spread the mascarpone mixture evenly over the cooled tart shell.
- In a separate bowl, toss the sliced nectarines with 1 tablespoon sugar and 1 teaspoon lemon juice.
- Arrange the nectarine slices over the mascarpone filling.
- Drizzle any remaining nectarine juices over the tart.
- Serve immediately or chill briefly before serving.
Notes
- Use ripe but firm nectarines for the best texture and flavor.
- Allow the tart shell to cool completely before adding the mascarpone filling.
- Keep the butter and water cold to achieve a tender crust.
- Peaches, plums, or apricots can be substituted for nectarines.
- For a richer flavor, chill the assembled tart for 30 minutes before serving.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
