Description

This Nectarine Crisp is a warm and comforting summer dessert made with juicy fresh nectarines and topped with a buttery oat crumble. The sweet-tart fruit filling and golden crisp topping create the perfect balance of flavor and texture, especially when served warm with vanilla ice cream.

Ingredients

Scale
  • 6 large nectarines, sliced
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1 pinch salt
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • Vanilla ice cream or whipped cream for serving (optional)

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9-inch baking dish.
  2. In a large bowl, combine sliced nectarines, honey, vanilla extract, flour, cinnamon, and salt. Toss gently until evenly coated.
  3. In a separate bowl, whisk together rolled oats, flour, brown sugar, cinnamon, and salt for the topping.
  4. Add the cold butter pieces to the topping mixture and use your fingers or a pastry cutter to blend until coarse crumbs form.
  5. Spread the nectarine filling evenly into the prepared baking dish.
  6. Sprinkle the oat crumble topping evenly over the nectarines.
  7. Place the baking dish on a baking sheet and bake for 50 to 60 minutes, or until the topping is golden brown and the filling is bubbling.
  8. Remove from the oven and let cool for 10 minutes before serving.
  9. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

  • Use ripe but slightly firm nectarines for the best texture.
  • Keep the butter cold to achieve a crisp and crumbly topping.
  • Old-fashioned rolled oats work best for texture; avoid instant oats.
  • You can substitute peaches or add berries for variation.
  • Store leftovers covered in the refrigerator for up to 4 days.
  • Reheat in the oven for a crispier topping.
