Description

Nectarine Golden Cake is a buttery summer fruit cake featuring juicy fresh nectarines, warm nutmeg, and a tender golden crumb. This easy seasonal dessert is perfect for brunch, afternoon coffee, or a light dessert served with whipped cream.


Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 tablespoon granulated sugar (for topping)
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon pure almond extract
  • 2 medium nectarines, pitted and cut into 1/2-inch wedges
  • 1/2 teaspoon freshly grated nutmeg


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly butter a 9-inch springform pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the butter and 3/4 cup sugar until pale and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the vanilla extract and almond extract.
  6. Gradually add the flour mixture and mix just until combined.
  7. Spread the batter evenly into the prepared pan.
  8. Arrange the nectarine wedges evenly over the top of the batter.
  9. Mix the nutmeg with the remaining 1/2 tablespoon sugar and sprinkle over the cake.
  10. Bake for 45–50 minutes, or until golden brown and the center springs back lightly when touched.
  11. Cool in the pan for 10 minutes.
  12. Remove the springform ring and allow the cake to cool until warm before serving.

Notes

  • Use ripe but firm nectarines for the best texture.
  • Do not overmix the batter to keep the cake tender.
  • Freshly grated nutmeg provides superior flavor.
  • The cake can be served warm, at room temperature, or chilled.
