- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 tablespoon granulated sugar (for topping)
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/8 teaspoon pure almond extract
- 2 medium nectarines, pitted and cut into 1/2-inch wedges
- 1/2 teaspoon freshly grated nutmeg
Instructions
- Preheat the oven to 350°F (175°C) and lightly butter a 9-inch springform pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and 3/4 cup sugar until pale and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract and almond extract.
- Gradually add the flour mixture and mix just until combined.
- Spread the batter evenly into the prepared pan.
- Arrange the nectarine wedges evenly over the top of the batter.
- Mix the nutmeg with the remaining 1/2 tablespoon sugar and sprinkle over the cake.
- Bake for 45–50 minutes, or until golden brown and the center springs back lightly when touched.
- Cool in the pan for 10 minutes.
- Remove the springform ring and allow the cake to cool until warm before serving.
Notes
- Use ripe but firm nectarines for the best texture.
- Do not overmix the batter to keep the cake tender.
- Freshly grated nutmeg provides superior flavor.
- The cake can be served warm, at room temperature, or chilled.
