Description

Nectarine Plum Crisps are individual fruit desserts made with fresh sliced nectarines and plums layered over a buttery crumb base and topped with a golden crisp topping. Easy to prepare and perfect for summer, these warm fruit crisps pair beautifully with vanilla ice cream.

Ingredients

Scale
  • 1 package (9 oz) apple crisp mix
  • 6 tablespoons cold butter, cubed
  • 2 cups fresh nectarines, sliced
  • 2 cups fresh plums, sliced
  • 2 teaspoons cornstarch
  • 1 scoop vanilla ice cream per serving (optional)
  • Cooking spray, as needed for ramekins

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly coat four 10-ounce ramekins or custard cups with cooking spray.
  2. Place the 9-ounce apple crisp mix in a small bowl. Cut in the 6 tablespoons cold cubed butter until the mixture becomes crumbly.
  3. Spoon half of the crumb mixture evenly into the prepared ramekins, creating a base layer.
  4. In another bowl, combine 2 cups sliced nectarines, 2 cups sliced plums, and 2 teaspoons cornstarch. Toss until evenly coated.
  5. Divide the fruit mixture among the ramekins and spread evenly over the crumb layer.
  6. Sprinkle the remaining crumb mixture over the fruit filling.
  7. Place the ramekins on a baking sheet and bake for 25 to 30 minutes, or until the filling is bubbly and the topping is golden brown.
  8. Remove from the oven and allow to cool for 5 to 10 minutes.
  9. Serve warm with a scoop of vanilla ice cream if desired.

Notes

  • Use ripe but firm nectarines and plums for the best texture.
  • Keep the butter cold to create a crisp and crumbly topping.
  • Frozen fruit can be substituted, but an extra teaspoon of cornstarch may be needed.
  • Allow the crisps to cool slightly before serving so the filling can thicken.
  • Store leftovers covered in the refrigerator for up to 3 days.
  • Reheat in the oven for the crispiest topping.
