- Cooking spray, as needed for ramekins
Instructions
- Preheat the oven to 375°F (190°C). Lightly coat four 10-ounce ramekins or custard cups with cooking spray.
- Place the 9-ounce apple crisp mix in a small bowl. Cut in the 6 tablespoons cold cubed butter until the mixture becomes crumbly.
- Spoon half of the crumb mixture evenly into the prepared ramekins, creating a base layer.
- In another bowl, combine 2 cups sliced nectarines, 2 cups sliced plums, and 2 teaspoons cornstarch. Toss until evenly coated.
- Divide the fruit mixture among the ramekins and spread evenly over the crumb layer.
- Sprinkle the remaining crumb mixture over the fruit filling.
- Place the ramekins on a baking sheet and bake for 25 to 30 minutes, or until the filling is bubbly and the topping is golden brown.
- Remove from the oven and allow to cool for 5 to 10 minutes.
- Serve warm with a scoop of vanilla ice cream if desired.

- Use ripe but firm nectarines and plums for the best texture.
