Description

These creamy Nectarine Popsicles are made with ripe fresh nectarines, plain yogurt, honey, and vanilla extract. Naturally sweetened and incredibly refreshing, they are an easy homemade frozen dessert perfect for summer days, family gatherings, and healthy snacking.


Ingredients

  • 6 ripe nectarines, pitted and chopped
  • 2 cups plain yogurt
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract


Instructions

  1. Wash, pit, and chop the nectarines into chunks.
  2. Place the nectarines in a blender and puree until completely smooth.
  3. In a medium bowl, whisk together the yogurt, honey, and vanilla extract until well combined.
  4. Alternate layers of nectarine puree and yogurt mixture into popsicle molds.
  5. Use a skewer or thin stick to gently swirl the layers together for a marbled effect.
  6. Insert popsicle sticks into the molds.
  7. Freeze for at least 6 hours or until completely firm.
  8. To serve, run warm water over the outside of the molds for a few seconds and gently remove the popsicles.

Notes

  • Use fully ripe nectarines for the sweetest flavor.
  • Greek yogurt can be substituted for a thicker and creamier texture.
  • For a dairy-free version, use coconut yogurt.
