Description

Nectarine & Raspberry Cobbler is a rustic summer dessert made with sweet ripe nectarines, tart fresh raspberries, and a tender homemade cobbler topping. Baked until golden and bubbling, this easy fruit cobbler is perfect served warm with vanilla ice cream or whipped cream.

  • 1/2 pound fresh raspberries
  • 2 tablespoons cinnamon sugar (plus extra for topping)
  • 1 cup (160 g) all-purpose flour
  • 1 pinch sea salt
  • 2 teaspoons baking powder
  • 2 tablespoons (30 g) cold unsalted butter, cut into small chunks
  • 3/4 cup (195 ml) heavy cream


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the sliced nectarines in a large bowl and toss gently with the cinnamon sugar.
  3. Add the fresh raspberries and carefully fold them into the fruit mixture.
  4. Transfer the fruit mixture to a 10-inch baking dish and spread evenly.
  5. In a medium bowl, whisk together the flour, sea salt, and baking powder.
  6. Add the cold butter and work it into the flour mixture until pea-sized crumbs form.
  7. Pour in the heavy cream and stir gently until a soft dough forms. Do not overmix.
  8. Pinch off small pieces of dough and place them over the fruit in a rustic pattern, leaving small gaps for the fruit to show through.
  9. Sprinkle additional cinnamon sugar over the dough topping.
  10. Bake for 30 to 40 minutes, or until the topping is golden brown and the fruit juices are bubbling.
  11. Remove from the oven and allow the cobbler to cool for at least 30 minutes before serving.
  12. Serve warm with vanilla ice cream or freshly whipped cream if desired.
