Description

Baked nectarines with cinnamon honey sauce is a simple and delicious summer dessert. Fresh nectarines are baked with a sweet, aromatic cinnamon honey sauce and topped with creamy vanilla ice cream, making it an irresistible treat for any occasion.

Ingredients

Scale
  • 3 nectarines, halved and pitted
  • 1/4 cup honey
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Vanilla ice cream (or your favorite ice cream)

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a baking dish with non-stick cooking spray.
  2. Cut the nectarines in half and remove the pits. Place them in the baking dish, cut side up.
  3. Whisk together the honey, cinnamon, and vanilla extract in a small bowl to make the cinnamon honey sauce.
  4. Spoon the cinnamon honey sauce over the nectarines, filling the center and letting the sauce drip down the sides. Reserve some sauce for drizzling later.
  5. Bake for 25-30 minutes, or until the nectarines are tender and the sauce is bubbling.
  6. Remove from the oven and top each nectarine half with a scoop of vanilla ice cream. Drizzle with the remaining sauce and serve immediately.

Notes

  • Double the sauce if you want extra for drizzling later.
  • You can substitute nectarines with peaches or plums for a different flavor.
  • For a dairy-free version, use dairy-free ice cream instead of regular vanilla ice cream.
  • Store leftovers in an airtight container for 2-3 days. The sauce lasts 1-2 weeks in the refrigerator.
