Instructions
- In a bowl, mix graham cracker crumbs, sugar, salt, and melted butter until well combined.
- Press the mixture firmly into the bottom of a tart pan, springform pan, or baking dish. Chill in the refrigerator for at least 30 minutes.
- Blend the blueberries in a food processor until smooth, then set aside.
- In a separate bowl, whip the cold heavy cream until stiff peaks form and set aside.
- In another bowl, beat the softened cream cheese until smooth. Add sugar and vanilla extract, then mix until creamy.
- Stir 1 cup of the blueberry puree into the cream cheese mixture until fully incorporated.
- Gently fold the whipped cream into the blueberry cream cheese mixture until light and fluffy.
- Spoon the filling into the chilled crust and smooth the top evenly.
- Refrigerate for at least 6 hours or preferably overnight until set.
- Before serving, whip the optional cream with sugar until stiff peaks form and use as topping. Serve chilled.
