Description

No Cook Divinity Candy is a light, fluffy, old-fashioned holiday candy made without cooking sugar syrup. Using fluffy white frosting mix, corn syrup, powdered sugar, vanilla, and pecans, this easy recipe delivers the classic melt-in-your-mouth texture of traditional divinity with much less effort.

Ingredients

Scale
  • 1 package (4.4 oz) Betty Crocker Fluffy White Frosting Mix
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup boiling water
  • 2 cups powdered sugar
  • 1 cup chopped pecans

Instructions

  1. Add the dry frosting mix, light corn syrup, vanilla extract, and boiling water to the bowl of a stand mixer fitted with a whisk attachment.
  2. Mix on low speed until combined, then increase to high speed and beat for about 5 minutes until stiff peaks form.
  3. Reduce the mixer speed to low and gradually add the powdered sugar until fully incorporated.
  4. Gently fold in the chopped pecans using a spatula.
  5. Drop teaspoon-sized portions of the mixture onto wax paper or parchment paper.
  6. Allow the candies to sit for approximately 4 hours until the outside feels firm.
  7. Turn each piece over and let dry for an additional 12 hours.
  8. Store the finished divinity candy in an airtight container at room temperature.

Notes

  • Use freshly boiling water for the best texture.
  • Beat until stiff peaks form to ensure proper setting.
  • Avoid making divinity on very humid days.
  • Allow sufficient drying time for the candy to firm up completely.
  • Store layers separated with wax paper to prevent sticking.
  • Substitute almond extract for vanilla extract for a flavor variation.
  • Walnuts or almonds can replace pecans if desired.
