- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1/2 cup (120ml) whole milk
- 2 cups (250g) fresh rhubarb, cut into 1/2-inch pieces
- 2 tablespoons granulated sugar (for topping)
- 2 tablespoons flaked almonds
- 2 tablespoons icing sugar (for dusting)
Instructions
- Preheat the oven to 350°F (180°C) and grease an 8-inch round cake pan. Line the bottom with parchment paper.
- Cream the butter and sugar together in a bowl until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Add the dry ingredients to the wet mixture alternately with the milk, mixing until just combined.
- Spread the batter evenly into the prepared pan.
- Arrange the rhubarb pieces evenly over the top, pressing them slightly into the batter.
- Sprinkle with the remaining sugar and flaked almonds.
- Bake for 30–40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a rack. Dust with icing sugar before serving.
