- 1 1/2 cups rolled oats
- 2 teaspoons baking powder
- 1 teaspoon pumpkin pie spice
- 1/4 tsp salt
- 1 1/2 cups milk of choice
- 3/4 cup pumpkin puree
- 1 large egg
- 1 teaspoon vanilla extract
- Semi-sweet chocolate chips (optional)
- Oil or butter (for cooking)
Instructions
- Add all ingredients (except oil and chocolate chips) to a blender and blend until smooth.
- Heat a frying pan or skillet over medium heat and add a little oil or butter.
- Pour about 1/3 cup of batter per pancake onto the pan. Cook until bubbles form (about 2-3 minutes).
- Flip pancakes and cook for another 1-2 minutes until golden brown on both sides.
- Repeat until all pancakes are cooked.
- Serve immediately with butter, maple syrup, nuts, or your desired toppings.
Notes
- If the batter thickens too much as it sits, add more milk one tablespoon at a time to reach the desired consistency.
- If making vegan pancakes, substitute the egg with a flax egg and use non-dairy milk.
- These pancakes can be stored in the fridge for up to 3 days or frozen for up to a month.
