Description
Old Fashioned Peanut Brittle is a classic homemade candy made with roasted peanuts in a crisp, buttery caramelized sugar coating. Cooked to the hard-crack stage, it cools into crunchy golden pieces that are perfect for holiday treats, dessert trays, and homemade gifts.
Ingredients
Scale
- 2 cups granulated sugar
- 1 cup water
- 1 cup light corn syrup
- 2 cups peanuts
- 1/2 teaspoon salt, only if using unsalted peanuts
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Instructions
- Line a large baking sheet with parchment paper or a silicone baking mat.
- Add the granulated sugar, water, and light corn syrup to a large saucepan. Place over medium heat.
- Cook, stirring occasionally, until the sugar mixture reaches 245°F on a candy thermometer.
- Add the peanuts, salt if using unsalted peanuts, and butter. Continue cooking and stirring occasionally until the mixture reaches 300°F, the hard-crack stage.
- Remove the saucepan from the heat and immediately stir in the vanilla extract and baking soda. The mixture will foam slightly.
- Immediately pour the hot peanut brittle mixture onto the prepared baking sheet. Carefully spread it into an even layer using a heat-safe spoon, butter knife, or offset spatula.
- Allow the brittle to cool completely for about 1 hour.
- Break the cooled Old Fashioned Peanut Brittle into pieces and serve or store in an airtight container.
Notes
- A candy thermometer is highly recommended because the mixture must reach 300°F for a crisp brittle texture.
- Do not allow the thermometer to touch the bottom of the saucepan, as this can give an inaccurate temperature reading.
- Roasted salted Spanish peanuts work especially well. If using salted peanuts, omit the additional salt.
- Watch the mixture closely as it approaches 300°F because the temperature can rise quickly.
- Prepare the baking sheet and measure all ingredients before starting because the brittle sets quickly after cooking.
- Store peanut brittle in an airtight container at room temperature for up to 2 weeks.
- Avoid refrigerating peanut brittle because moisture can soften its crisp texture.
- For easy cleanup, add water to the cooled saucepan and bring it to a boil to dissolve hardened sugar residue.
