Description

Old-Fashioned Snowball Cake is a nostalgic no-bake dessert made with fluffy angel food cake, sweet crushed pineapple, creamy Cool Whip, and shredded coconut. This vintage holiday cake is shaped into a beautiful snowball, chilled overnight until perfectly set, and finished with a snowy coconut coating and maraschino cherries. It is easy to prepare ahead of time and makes a wonderful dessert for Christmas, family gatherings, and special occasions.

Ingredients

Scale
  • 1 (10-inch) angel food cake, cut into 1-inch cubes
  • 6 cups Cool Whip, divided (4 cups for the filling and 2 cups for frosting)
  • 1 (20-ounce) can crushed pineapple in syrup, drained (reserve 1 cup of syrup)
  • 2 packets (0.25 ounces each) unflavored gelatin
  • 4 tablespoons cold water
  • 2 tablespoons lemon juice
  • 1 cup white granulated sugar
  • 1 cup boiling water
  • 8 to 10 ounces sweetened flaked coconut
  • Maraschino cherries, for decoration

Instructions

  1. Line a large 4-quart mixing bowl with parchment paper, making sure the bottom and sides are completely covered.
  2. Cut the angel food cake into approximately 1-inch cubes and set aside.
  3. Drain the crushed pineapple, reserving 1 cup of syrup. If there is not enough syrup, add water to make 1 cup.
  4. Place the unflavored gelatin in a small bowl with 4 tablespoons of cold water. Allow it to soften.
  5. Add the lemon juice, reserved pineapple syrup, granulated sugar, and boiling water to the softened gelatin. Stir until the gelatin and sugar are completely dissolved.
  6. Refrigerate the gelatin mixture for approximately 20 to 30 minutes, or until it begins to thicken slightly.
  7. Stir the drained crushed pineapple into the thickened gelatin mixture. Gently fold in 4 cups of Cool Whip until evenly combined.
  8. Place a layer of angel food cake cubes into the prepared bowl, followed by a layer of the pineapple and Cool Whip mixture. Continue alternating layers until all the ingredients are used.
  9. Cover the bowl and refrigerate overnight or for at least 10 hours, allowing the gelatin to set completely.
  10. When ready to serve, place a large serving platter over the bowl and carefully invert the cake onto the platter. Remove the bowl and gently peel away the parchment paper.
  11. Frost the entire cake with the remaining 2 cups of Cool Whip, covering the top and sides.
  12. Generously sprinkle sweetened flaked coconut over the frosting and decorate with maraschino cherries. Slice and serve chilled.

Notes

  • Use a 4-quart mixing bowl to create the traditional rounded snowball shape.
  • Line the bowl with parchment paper to make removing the chilled cake easier.
  • Use regular plain unflavored gelatin, not flavored gelatin dessert powder.
  • Make sure the gelatin mixture has cooled and started thickening before folding in the Cool Whip.
  • Fold the whipped topping gently to maintain its light and fluffy texture.
  • If the pineapple can does not contain 1 cup of syrup, add water to reach the required amount.
  • Refrigerate the assembled cake for at least 10 hours or overnight before unmolding.
  • Stabilized homemade whipped cream can be substituted for Cool Whip, although the texture and frosting stability may differ.
  • Add chopped pecans or festive red and green sprinkles for a decorative variation.
  • Store leftovers in an airtight container in the refrigerator for 4 to 5 days.
  • This dessert is best served chilled. Freezing is not recommended because it may affect the texture of the gelatin and whipped topping.
