Description

Overnight Taco Pasta is a creamy, cheesy, make-ahead casserole packed with seasoned ground beef, pasta, beans, and bold Tex-Mex flavors. Perfect for busy weeknights, this dish is prepared in advance and baked to bubbly perfection for a comforting and satisfying meal.

  • 1 packet (1 oz) taco seasoning
  • 1 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 12 oz pasta (penne or rotini)
  • 2 cups shredded cheese (cheddar or Monterey Jack), divided
  • 1 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1/4 cup sliced jalapeños
  • Optional: 1/4 cup chopped green onions
  • Optional: 1 avocado, sliced


Instructions

  1. Cook 1 lb ground beef in a large skillet over medium heat until browned, about 6–8 minutes. Drain excess fat.
  2. Add taco seasoning and 1 cup water. Stir and simmer for 5 minutes until thickened.
  3. Cook 12 oz pasta according to package instructions until al dente. Drain and set aside.
  4. In a large bowl, combine cooked beef, black beans, corn, diced tomatoes, and pasta. Mix well.
  5. Stir in 1 cup shredded cheese and 1 cup sour cream until creamy and evenly combined.
  6. Transfer mixture into a greased 9×13-inch baking dish and spread evenly.
  7. Top with remaining 1 cup shredded cheese.
  8. Cover with foil and refrigerate overnight (8–24 hours).
  9. Preheat oven to 350°F (175°C). Bake covered for 30 minutes.
  10. Remove foil and bake an additional 10–15 minutes until cheese is bubbly and golden.
  11. Garnish with cilantro and optional toppings before serving.

  • Cook pasta slightly firm to prevent over-softening after baking.
  • Refrigerating overnight enhances the flavor and texture.
