- 1 packet (1 oz) taco seasoning
- 1 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 12 oz pasta (penne or rotini)
- 2 cups shredded cheese (cheddar or Monterey Jack), divided
- 1 cup sour cream
- 1/4 cup fresh cilantro, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: 1/4 cup sliced jalapeños
- Optional: 1/4 cup chopped green onions
- Optional: 1 avocado, sliced
Instructions
- Cook 1 lb ground beef in a large skillet over medium heat until browned, about 6–8 minutes. Drain excess fat.
- Add taco seasoning and 1 cup water. Stir and simmer for 5 minutes until thickened.
- Cook 12 oz pasta according to package instructions until al dente. Drain and set aside.
- In a large bowl, combine cooked beef, black beans, corn, diced tomatoes, and pasta. Mix well.
- Stir in 1 cup shredded cheese and 1 cup sour cream until creamy and evenly combined.
- Transfer mixture into a greased 9×13-inch baking dish and spread evenly.
- Top with remaining 1 cup shredded cheese.
- Cover with foil and refrigerate overnight (8–24 hours).
- Preheat oven to 350°F (175°C). Bake covered for 30 minutes.
- Remove foil and bake an additional 10–15 minutes until cheese is bubbly and golden.
- Garnish with cilantro and optional toppings before serving.
