Description

Patriotic Poke Cake is a festive red, white, and blue dessert made with colorful swirled white cake, creamy cheesecake pudding filling, homemade whipped cream, and patriotic sprinkles.   • 1 box white cake mix (15.25 oz)
  • 3 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 2 boxes instant cheesecake pudding mix (3.4 oz each)
  • 3 1/2 cups cold milk
  • 2 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon red food coloring
  • 1 teaspoon blue food coloring
  • 1/4 cup patriotic sprinkles


Instructions

  1. Preheat the oven according to the cake mix package instructions and grease a 9×13-inch baking dish.
  2. Prepare the cake mix using the eggs, water, and oil as directed on the package.
  3. Divide the batter evenly into three bowls. Leave one bowl plain, color one red, and color the other blue.
  4. Drop spoonfuls of each batter color randomly into the prepared pan, layering until all batter is used. Gently swirl with a toothpick.
  5. Bake according to package directions until a toothpick inserted into the center comes out clean.
  6. Cool the cake for 10 minutes, then use the handle of a wooden spoon to poke holes evenly across the surface.
  7. Allow the cake to cool completely.
  8. Whisk together the cheesecake pudding mix and cold milk until smooth. Before it fully sets, pour the pudding over the cake, filling the holes. Spread any remaining pudding on top.
  9. Refrigerate for at least 4 hours or overnight until fully set.
  10. Beat the heavy cream and vanilla extract until soft peaks form. Add powdered sugar and continue beating until stiff peaks form.
  11. Spread the whipped cream evenly over the chilled cake.
  12. Top with patriotic sprinkles, slice, and serve chilled.

  • Do not over-swirl the colored batters or the colors may blend together.
