Description

  • 1/2 clove garlic (for the pesto)
  • Salt and pepper to taste
  • 6 slices ciabatta bread
  • 2 tablespoons olive oil (for brushing bread)
  • 1/2 clove garlic (for rubbing bread)
  • Extra pea shoots for garnish
  • Freshly grated parmesan for garnish
  • Lemon zest for garnish
  • Cracked black pepper and extra virgin olive oil for drizzling


Instructions

  1. Place the peas, parmesan, olive oil, lemon juice, garlic, and pea shoots in a food processor. Pulse until a rough paste forms, leaving some texture.
  2. Season the pea mixture with salt and pepper to taste. Set aside while preparing the bread.
  3. Preheat the grill or broiler. Slice the ciabatta about 1/2 inch thick and drizzle lightly with olive oil.
  4. Toast the slices for 2–3 minutes per side until golden and crisp.
  5. While still warm, rub each toast lightly with the cut side of a garlic clove.
  6. Spread a generous amount of the pea mixture onto each slice of toast.
  7. Top with extra parmesan, lemon zest, and fresh pea shoots.
  8. Finish with a drizzle of extra virgin olive oil and cracked black pepper before serving.

Notes

  • No need to cook the peas — simply thaw or blanch for 60 seconds if using frozen.
