Description

Old-Fashioned Peach Ice Cream is a creamy, refreshing dessert made with ripe peaches, sugar, and a rich custard base.   • 3 medium-sized fresh peaches (peeled, pitted, and chopped – approximately 2 cups)
  • ¼ cup sugar
  • 2 cups heavy cream
  • 1 cup milk
  • ¾ cup sugar
  • ¼ teaspoon salt
  • 4 egg yolks
  • 1 teaspoon pure vanilla extract


Instructions

  1. Place chopped peaches in a bowl. Add ¼ cup sugar and stir. Cover and let sit for at least 1 hour.
  2. Once peaches have released a lot of juice, place peaches and juice in a food processor. Pulse 3-4 times just until peaches are broken up into small pieces.
  3. In a saucepan, heat heavy cream, milk, and ¾ cup sugar along with the salt. Warm over medium heat, stirring often until the sugar has dissolved, about 3-4 minutes.
  4. In a separate bowl, beat egg yolks until smooth and lighter in color.
  5. Take ½ cup of the heated cream mixture and slowly pour it into the egg yolks while whisking constantly.
  6. Pour the egg mixture back into the remaining cream mixture and heat over medium heat for 5-8 minutes, stirring often. The mixture will thicken enough to coat the back of a spoon and should reach 175°F to 185°F.
  7. Place a fine strainer over a bowl and pour the custard mixture through it to remove any small bits of egg or lumps.
  8. Stir in vanilla extract and the peach mixture with its juices.
  9. Cover and refrigerate the mixture for at least 4 hours or overnight.
  10. Once chilled, pour the mixture into an ice cream maker and churn for 20-25 minutes.
  11. Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours before serving.

Notes

  • Ensure your custard is fully chilled before churning for the best texture.
  • If you don’t have an ice cream maker, you can manually stir the mixture every 30 minutes while it freezes to avoid large ice crystals.
  • Use ripe peaches for maximum flavor, or frozen unsweetened peaches if fresh ones aren’t available.
  • Store leftovers in an airtight container in the coldest part of your freezer.
