Description

Peanut Butter Chocolate Zucchini Bread is a rich, moist quick bread made with fresh shredded zucchini, cocoa powder, creamy peanut butter, and chocolate chips.   • 2 large eggs

  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely shredded fresh zucchini
  • 1/2 cup creamy peanut butter
  • 3/4 cup semi-sweet chocolate chips, plus extra for topping if desired


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Wash and trim the zucchini, then finely shred it. Do not squeeze out all of the moisture unless the zucchini is exceptionally wet.
  3. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt until evenly combined.
  4. In a large mixing bowl, whisk the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until smooth.
  5. Stir the shredded zucchini into the wet mixture until evenly distributed.
  6. Add the dry ingredients to the wet ingredients and gently fold just until no large streaks of flour remain. Do not overmix.
  7. Fold in the chocolate chips, reserving a small amount for the top of the loaf if desired.
  8. Pour half of the chocolate zucchini batter into the prepared loaf pan. Spoon portions of the peanut butter over the batter, then add the remaining batter. Add more peanut butter over the top and gently swirl it through the batter with a knife.
  9. Sprinkle the reserved chocolate chips over the top.
  10. Bake for 50 to 60 minutes, or until the center is set and a toothpick inserted near the middle comes out without raw batter. Melted chocolate on the toothpick is normal.
  11. Cool the bread in the pan for about 15 minutes, then transfer it to a wire rack and allow it to cool before slicing.

  • Use fresh, firm zucchini for the best texture and moisture.
  • There is usually no need to peel the zucchini before shredding.
  • Avoid squeezing all the liquid from the zucchini because its natural moisture helps keep the bread tender.
  • For the most consistent baking results, use conventional creamy peanut butter rather than very runny natural peanut butter.
  • Do not overmix the batter after adding the flour, as this can make the bread dense or tough.
  • Dark, semi-sweet, or milk chocolate chips can be used depending on your preferred sweetness.
