Description

Peanut Butter Frozen Yogurt Bars are a cool and creamy no-bake dessert made with Greek yogurt, peanut butter, maple syrup, crunchy peanuts, and a crisp chocolate shell.   • 1/2 cup creamy peanut butter
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons roasted and salted peanuts
  • 1 cup chocolate chips or 6 ounces chopped chocolate
  • 2 tablespoons coconut oil
  • 4-6 popsicle sticks


Instructions

  1. Line a baking sheet or tray with wax paper or a silicone baking mat.
  2. In a medium bowl, combine 1 cup Greek yogurt, 1/2 cup creamy peanut butter, 1 tablespoon maple syrup or honey, and 1 teaspoon vanilla extract.
  3. Stir until the mixture is completely smooth and creamy.
  4. Scoop the mixture into 4-6 evenly sized mounds on the prepared tray.
  5. Insert a popsicle stick into each mound and gently press it into place.
  6. Use a spatula to slightly flatten and shape each bar.
  7. Sprinkle 2 tablespoons roasted and salted peanuts evenly over the bars.
  8. Freeze for at least 2 hours or until completely solid.
  9. In a microwave-safe bowl, combine 1 cup chocolate chips and 2 tablespoons coconut oil.
  10. Microwave in short intervals, stirring frequently, until smooth and fully melted.
  11. Remove the frozen bars from the freezer and dip each one into the melted chocolate mixture.
  12. Allow excess chocolate to drip off and place the bars back onto the lined tray.
  13. Enjoy immediately or return to the freezer for later storage.
  14. Before serving from frozen, let the bars sit at room temperature for 5-10 minutes for the best texture.
