Instructions

- Insert a popsicle stick into each mound and gently press it into place.
- Use a spatula to slightly flatten and shape each bar.
- Sprinkle 2 tablespoons roasted and salted peanuts evenly over the bars.
- Freeze for at least 2 hours or until completely solid.
- In a microwave-safe bowl, combine 1 cup chocolate chips and 2 tablespoons coconut oil.
- Microwave in short intervals, stirring frequently, until smooth and fully melted.
- Remove the frozen bars from the freezer and dip each one into the melted chocolate mixture.
- Allow excess chocolate to drip off and place the bars back onto the lined tray.
- Enjoy immediately or return to the freezer for later storage.
- Before serving from frozen, let the bars sit at room temperature for 5-10 minutes for the best texture.
