Description

This Pesto Orzo Salad is a creamy, flavorful pasta dish made with tender orzo, rich pesto, smooth ricotta, sweet peas, and crunchy pistachios. Perfect served warm or cold, it’s a quick and versatile recipe ideal for lunches, dinners, or side dishes.


Ingredients

  • 1 lb orzo pasta
  • 1/2 cup ricotta cheese
  • 3 tablespoons pesto sauce
  • 1/2 cup frozen peas (thawed)
  • 2 tablespoons roasted pistachios
  • 2 teaspoons lemon juice
  • 1/4 teaspoon lemon zest
  • 1/4 cup Pecorino Romano cheese (grated)
  • 1/2 cup reserved pasta water


Instructions

  1. Bring a large pot of salted water to a boil and cook the orzo pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a medium bowl, whisk together ricotta cheese, pesto sauce, lemon juice, lemon zest, and 1/4 cup of the reserved pasta water until smooth.
  3. Transfer the drained orzo to a large mixing bowl and add the thawed peas while the pasta is still warm.
  4. Pour the pesto ricotta mixture over the orzo and gently toss until the pasta is evenly coated.
  5. Add the pistachios and mix to combine. If the salad seems too thick, gradually add the remaining pasta water until desired consistency is reached.
  6. Top with grated Pecorino Romano cheese and serve warm or refrigerate to serve cold.
