- 1/2 cup ricotta cheese
- 3 tablespoons pesto sauce
- 1/2 cup frozen peas (thawed)
- 2 tablespoons roasted pistachios
- 2 teaspoons lemon juice
- 1/4 teaspoon lemon zest
- 1/4 cup Pecorino Romano cheese (grated)
- 1/2 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil and cook the orzo pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a medium bowl, whisk together ricotta cheese, pesto sauce, lemon juice, lemon zest, and 1/4 cup of the reserved pasta water until smooth.
- Transfer the drained orzo to a large mixing bowl and add the thawed peas while the pasta is still warm.
- Pour the pesto ricotta mixture over the orzo and gently toss until the pasta is evenly coated.
- Add the pistachios and mix to combine. If the salad seems too thick, gradually add the remaining pasta water until desired consistency is reached.
- Top with grated Pecorino Romano cheese and serve warm or refrigerate to serve cold.
