Ingredients
Scale
- 2 lb ground beef (85/15 lean ratio)
- 2 tsp sea salt
- 1/2 tsp black pepper
- 3 large bell peppers, thinly sliced (mixed colors)
- 1 large onion, thinly sliced
- 1/2 tbsp Italian seasoning
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 4 oz cream cheese, softened
- 1/4 cup chicken broth (low sodium)
- 6 slices provolone cheese (about 4 oz)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium-high heat, cook the ground beef with salt and black pepper, breaking it apart until fully browned (about 8–10 minutes).
- Add the sliced bell peppers and onion to the skillet. Stir in Italian seasoning, smoked paprika, and garlic powder. Cook for 10–15 minutes until vegetables are tender.
- Add the softened cream cheese and chicken broth. Stir until the mixture becomes smooth and creamy.
- Transfer the beef and vegetable mixture into a large baking dish and spread evenly.
- Layer provolone cheese slices on top, slightly overlapping.
- Bake for 10–15 minutes until the cheese is melted and lightly golden.
- Remove from oven, let rest for a few minutes, then serve warm.
Notes
- Drain excess grease from the beef for a lighter casserole.
- Soften cream cheese before adding to ensure a smooth sauce.
- Broil for 1–2 minutes at the end for a golden cheese topping.
- Substitute ground turkey or sliced steak if desired.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- Freeze unbaked casserole for up to 3 months for easy meal prep.
