Description

Pina Colada Lush is a creamy, no-bake layered dessert featuring a buttery cookie crust, pineapple cream cheese layer, coconut pudding, and fluffy whipped topping finished with toasted coconut for a tropical treat.

  • 8 oz (226 g) whipped topping, divided
  • 3.4 oz (96 g) instant coconut pudding mix
  • 1 cup (240 ml) milk
  • 1/2 cup (40 g) toasted coconut
  • Maraschino cherries (optional, for garnish)


Instructions

  1. Crush the Golden Oreo cookies into fine crumbs and mix with melted butter until fully combined.
  2. Press the mixture firmly into the bottom of an 8×8-inch (20×20 cm) baking dish to form the crust. Chill for 10–15 minutes.
  3. In a bowl, beat the softened cream cheese, powdered sugar, and 4 oz (113 g) whipped topping until smooth and creamy.
  4. Fold in the drained crushed pineapple until evenly combined.
  5. Spread the cream cheese mixture evenly over the chilled crust.
  6. In another bowl, whisk together the coconut pudding mix and milk. Let it sit for 2–3 minutes until thickened.
  7. Spread the pudding layer gently over the cream cheese layer.
  8. Top with the remaining 4 oz (113 g) whipped topping and spread evenly.
  9. Sprinkle toasted coconut over the top and garnish with cherries if desired.
  10. Refrigerate for at least 2–4 hours before slicing and serving.
