- 15 ounces crushed pineapple, drained well
- 1 cup sweetened shredded coconut
- 1/4 cup toasted coconut, for garnish

- 6 maraschino cherries, for garnish
Instructions
- In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until fully combined.
- Press the crumb mixture into the bottom and sides of a 9-inch pie dish. Refrigerate while preparing the filling.
- In a chilled mixing bowl, beat the cold heavy cream until soft peaks form. Add powdered sugar and continue mixing until stiff peaks form. Set aside.
- Drain the crushed pineapple thoroughly using a fine mesh sieve to remove excess liquid.
- In a separate large bowl, beat the softened cream cheese until smooth and creamy.
- Add the granulated sugar and rum extract to the cream cheese mixture and beat until fully combined.
- Fold the drained pineapple and shredded coconut into the cream cheese mixture.
- Gently fold the whipped cream into the filling mixture until smooth and fluffy.
- Spoon the filling into the chilled graham cracker crust and smooth the top evenly.
- Refrigerate the pie for at least 3 hours or overnight until fully set.
- Before serving, top with whipped cream, toasted coconut, and maraschino cherries.

- Drain the pineapple very well to prevent the filling from becoming watery.
