Description

This Pina Colada Pie is a creamy no-bake tropical dessert made with a buttery graham cracker crust, fluffy pineapple coconut filling, and whipped cream topping. Packed with sweet pineapple, coconut, and a hint of rum flavor, this chilled pie is refreshing, rich, and perfect for summer gatherings, BBQs, and family desserts.

  • 1/2 cup salted butter, melted
  • 1/3 cup granulated sugar
  • 1 1/2 cups heavy cream, very cold
  • 1 tablespoon powdered sugar
  • 8 ounces cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 teaspoon rum extract
  • 15 ounces crushed pineapple, drained well
  • 1 cup sweetened shredded coconut
  • 1/4 cup toasted coconut, for garnish
  • 1/2 cup whipped cream, for topping
  • 6 maraschino cherries, for garnish


Instructions

  1. In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until fully combined.
  2. Press the crumb mixture into the bottom and sides of a 9-inch pie dish. Refrigerate while preparing the filling.
  3. In a chilled mixing bowl, beat the cold heavy cream until soft peaks form. Add powdered sugar and continue mixing until stiff peaks form. Set aside.
  4. Drain the crushed pineapple thoroughly using a fine mesh sieve to remove excess liquid.
  5. In a separate large bowl, beat the softened cream cheese until smooth and creamy.
  6. Add the granulated sugar and rum extract to the cream cheese mixture and beat until fully combined.
  7. Fold the drained pineapple and shredded coconut into the cream cheese mixture.
  8. Gently fold the whipped cream into the filling mixture until smooth and fluffy.
  9. Spoon the filling into the chilled graham cracker crust and smooth the top evenly.
  10. Refrigerate the pie for at least 3 hours or overnight until fully set.
  11. Before serving, top with whipped cream, toasted coconut, and maraschino cherries.

Notes

  • Drain the pineapple very well to prevent the filling from becoming watery.
  • Use cold heavy cream and chilled mixing tools for the best whipped cream texture.
  • Do not overmix the whipped cream into the filling to keep the pie light and fluffy.
  • The pie tastes even better after chilling overnight.
  • Store leftovers covered in the refrigerator for up to 3 days.
