Description

  • 1 1/2 cups shredded coconut
  • 1 cup chopped pecans (plus extra for garnish)


Instructions

  1. In a large mixing bowl, combine the instant vanilla pudding mix with the crushed pineapple and its juice. Stir well until the pudding mix is fully dissolved and the mixture begins to thicken.
  2. Gently fold in the whipped topping using a spatula, mixing until smooth and creamy without deflating the mixture.
  3. Add the mini marshmallows, shredded coconut, and chopped pecans. Fold everything together until evenly combined.
  4. Cover the bowl and refrigerate for 2 to 4 hours to allow the flavors to meld and the texture to set.
  5. Before serving, stir lightly and garnish with extra pineapple, marshmallows, coconut, or pecans if desired.
