Description

This Pizza Grilled Cheese combines the best of both worlds—crispy, buttery bread filled with layers of gooey mozzarella cheese, pepperoni, and Italian flavors. For the Garlic Butter Spread

  • ½ cup unsalted butter, very soft
  • 1 tablespoon grated parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon dried Italian seasoning

For the Sandwich

  • 8 slices white bread
  • 12 slices mozzarella cheese
  • 6 ounces pepperoni
  • Warm pizza sauce, for dipping


Instructions

  1. Make the Garlic Butter Spread: In a medium bowl, mix together the softened butter, parmesan cheese, garlic powder, and Italian seasoning until smooth and well combined.
  2. Prepare the Bread: Spread an even layer of the garlic butter mixture on one side of each bread slice. Place them butter-side up on a plate while preparing the filling.
  3. Assemble the Sandwich: Place one slice of bread, butter side down, into a skillet over medium-low heat. Layer with a slice of mozzarella cheese, 6 slices of pepperoni, another slice of mozzarella, another 6 slices of pepperoni, and a final slice of mozzarella. Top with a second slice of bread, butter side up.
  4. Cook Until Golden: Cover the skillet with a lid and cook for about 3–5 minutes until the bottom is golden brown. Carefully flip the sandwich using a spatula, then cover again and cook until the second side is crispy and the cheese is fully melted.
  5. Serve and Enjoy: Remove from the skillet and let it cool slightly before slicing. Serve with warm pizza sauce for dipping and enjoy.

Notes

  • If adding veggies or other toppings, pre-cook them to prevent excess moisture.
  • For an extra crispy sandwich, place cooked sandwiches on a wire rack to cool instead of a plate.
  • Mozzarella melts best, but provolone or a mix of cheddar and parmesan can add more depth.
  • Avoid pressing down on the sandwich while cooking to keep the cheese gooey inside.
