Protein Fluff is a light, creamy, and high-protein dessert made by blending protein powder with frozen fruit, milk, and a small amount of thickener until airy and mousse-like. It is quick to prepare, naturally satisfying, and perfect as a healthy snack, post-workout treat, or low-calorie dessert.

- 1 scoop chocolate protein powder
- 1 1/2 cups ice cubes
- 1/2 cup frozen banana slices
- 1/2 cup unsweetened almond milk
- 1 tablespoon unsweetened cocoa powder
- 1 to 2 tablespoons sweetener of choice
- 1/4 teaspoon xanthan gum
- 1/8 teaspoon salt
- 1/2 teaspoon pure vanilla extract
Instructions
- Add the ice cubes, frozen banana slices, almond milk, chocolate protein powder, cocoa powder, sweetener, xanthan gum, salt, and vanilla extract to a high-speed blender or food processor.
- Blend on high speed for 30 seconds, then stop and scrape down the sides to make sure all of the ingredients are mixing evenly.
- Continue blending for 1 to 2 minutes, or until the mixture increases in volume and becomes thick, smooth, and fluffy.
- Check the texture. If the Protein Fluff is too thick, add 1 tablespoon of almond milk at a time and blend again. If it is too thin, add a few more ice cubes and blend until fluffy.
- Taste and adjust the sweetness if needed by adding a little more sweetener and blending briefly.
- Spoon the Protein Fluff into a bowl or glass and serve immediately for the best airy texture.

- Use a high-speed blender or food processor for the fluffiest texture.
- Start with less liquid to avoid making the mixture too thin.
- Xanthan gum helps stabilize the dessert and gives it more volume.
