Description

Protein Fluff is a light, creamy, and high-protein dessert made by blending protein powder with frozen fruit, milk, and a small amount of thickener until airy and mousse-like. It is quick to prepare, naturally satisfying, and perfect as a healthy snack, post-workout treat, or low-calorie dessert.

Ingredients

Scale
  • 1 scoop chocolate protein powder
  • 1 1/2 cups ice cubes
  • 1/2 cup frozen banana slices
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon unsweetened cocoa powder
  • 1 to 2 tablespoons sweetener of choice
  • 1/4 teaspoon xanthan gum
  • 1/8 teaspoon salt
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Add the ice cubes, frozen banana slices, almond milk, chocolate protein powder, cocoa powder, sweetener, xanthan gum, salt, and vanilla extract to a high-speed blender or food processor.
  2. Blend on high speed for 30 seconds, then stop and scrape down the sides to make sure all of the ingredients are mixing evenly.
  3. Continue blending for 1 to 2 minutes, or until the mixture increases in volume and becomes thick, smooth, and fluffy.
  4. Check the texture. If the Protein Fluff is too thick, add 1 tablespoon of almond milk at a time and blend again. If it is too thin, add a few more ice cubes and blend until fluffy.
  5. Taste and adjust the sweetness if needed by adding a little more sweetener and blending briefly.
  6. Spoon the Protein Fluff into a bowl or glass and serve immediately for the best airy texture.

Notes

  • Use a high-speed blender or food processor for the fluffiest texture.
  • Start with less liquid to avoid making the mixture too thin.
  • Xanthan gum helps stabilize the dessert and gives it more volume.
  • You can swap the chocolate protein powder for vanilla protein powder for a different flavor.
  • Frozen strawberries or mixed berries can replace the banana for a fruitier version.
  • Protein Fluff is best enjoyed right after blending because it can lose volume as it sits.
