Description

Pumpkin Churro Bites are a delightful autumn treat, combining the rich flavors of pumpkin, cinnamon, and sugar.   • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon baking soda
  • 2 1/2 teaspoons pumpkin spice
  • 15 ounces pumpkin purée
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 tablespoons butter, melted
  • 1/3 cup granulated sugar (for coating)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin pan or use mini muffin liners.
  2. In a large bowl, combine the flour, granulated sugar, brown sugar, baking soda, and pumpkin spice. Mix well to combine.
  3. In a separate bowl, whisk together the pumpkin purée, vegetable oil, eggs, and vanilla extract until smooth and fully combined.
  4. Gently fold the dry ingredients into the wet ingredients, mixing just until combined. Be careful not to overmix.
  5. Spoon the batter into the prepared mini muffin pan, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bites cool in the pan for a few minutes before transferring them to a large bowl.
  8. Melt the butter and pour it over the cooled bites. In a small bowl, mix together the granulated sugar, cinnamon, and pumpkin pie spice. Toss the bites in the cinnamon sugar mixture until well coated. You can shake the bowl for easy and even coating!
