Instructions
- Preheat the oven to 375°F and line a standard muffin pan with paper baking cups.
- In a medium bowl, whisk together the flour, baking powder, salt, and pumpkin pie spice until evenly combined.
- In a large bowl, whisk together the pumpkin puree, brown sugar, granulated sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Add the dry ingredients to the pumpkin mixture and stir just until combined. Avoid overmixing the batter.
- In a separate bowl, beat the softened cream cheese until smooth. Add the 1/4 cup granulated sugar, egg yolk, and 2 teaspoons vanilla extract, then beat until creamy and well combined.
- Transfer the cream cheese mixture to a small sealable or piping bag and cut an opening about 1/4 inch wide in one corner.
- Fill each muffin cup about one-third full with pumpkin batter.
- Pipe about 1 tablespoon of cream cheese filling over the pumpkin batter in each cup.
- Add more pumpkin batter until each muffin cup is almost full.
- Pipe a small amount of the remaining cream cheese filling over each muffin in a circular pattern.
- Use a toothpick to gently swirl the cream cheese into the pumpkin batter. Swirl only a few times so the two mixtures remain visibly marbled.
