Description

Pumpkin Crinkle Cookies are soft, chewy fall cookies made with concentrated pumpkin puree, warm pumpkin pie spices, and a generous coating of powdered sugar. These easy seasonal cookies have a beautiful crinkle appearance, rich pumpkin flavor, and a tender texture perfect for Thanksgiving, holiday baking, or everyday treats.

Ingredients

Scale
  • 1 cup pumpkin puree: reduced to concentrate the pumpkin flavor and remove excess moisture
  • 1 1/2 cups granulated sugar: adds sweetness and helps create the cookie texture
  • 1/2 cup unsalted butter: provides richness and a tender crumb
  • 2 teaspoons pumpkin pie spice: adds warm cinnamon, ginger, nutmeg, and clove flavors
  • 1 teaspoon vanilla extract: enhances the overall sweetness and aroma
  • 1 teaspoon salt: balances the flavors
  • 2 1/2 cups all-purpose flour: provides structure for the cookies
  • 2 teaspoons baking powder: helps the cookies rise slightly
  • 1/2 teaspoon baking soda: supports the texture and spread
  • 1/4 cup granulated sugar for coating: creates the first coating layer
  • 1 cup confectioners’ sugar: creates the classic crinkle finish

Instructions

  1. Cook the pumpkin puree in a small saucepan over medium heat for 7 to 10 minutes, stirring often, until it becomes darker and thicker with less moisture.
  2. Combine sugar, butter, pumpkin pie spice, vanilla extract, and salt in a large bowl. Add the warm reduced pumpkin and stir until the butter melts and the mixture becomes smooth.
  3. Add flour, baking powder, and baking soda to the pumpkin mixture. Stir gently until a soft dough forms and no dry flour remains.
  4. Cover the dough and refrigerate for at least 1 hour to make it easier to handle and help create the crinkle effect.
  5. Preheat the oven to 350°F and prepare baking sheets with parchment paper.
  6. Place granulated sugar and confectioners’ sugar in separate bowls. Scoop the dough into small portions and roll each piece first in granulated sugar, then generously in confectioners’ sugar.
  7. Arrange the coated dough balls on baking sheets with space between each cookie.
  8. Bake for 15 to 18 minutes, rotating the baking sheets halfway through, until the cookies are puffed and the centers are set.
  9. Cool the cookies on the baking sheet before serving to allow the texture to fully develop.

Notes

  • Reduce the pumpkin puree before mixing to prevent overly cakey cookies and intensify the pumpkin flavor.
  • Chill the dough before baking to help the cookies maintain their shape and create a stronger crinkle pattern.
  • Use a generous amount of confectioners’ sugar coating for the classic snowy cracked appearance.
  • Store cooled cookies in an airtight container at room temperature for several days.
  • Cookies can be frozen in an airtight container and thawed at room temperature before serving.
