Instructions
- Place eggs in a pot, cover with water, and bring to a boil. Once boiling, turn off heat and let sit covered for 10-12 minutes. Then transfer to an ice bath.
- Peel the cooled eggs and slice them in half lengthwise.
- Gently remove the yolks and place them in a mixing bowl.
- Add mayonnaise, mustard, salt, pepper, and paprika to the yolks. Mix until smooth and creamy.
- Optional: Add a few drops of orange food coloring to enhance the pumpkin color and mix well.
- Transfer the yolk mixture to a piping bag with a round or star tip.
- Pipe the filling into each egg white half, building it up slightly to mimic a pumpkin shape.
- Use a toothpick to draw vertical lines on the filling to resemble pumpkin ridges.
- Insert a small piece of green onion into the top center of the filling to act as the pumpkin stem.
- Chill in the refrigerator until ready to serve.
