Description

Pumpkin Deviled Eggs are a festive fall appetizer with a creamy, tangy filling piped to resemble miniature pumpkins. Perfect for Halloween parties, Thanksgiving gatherings, or any autumn-themed event, this recipe combines classic deviled egg flavors with creative, seasonal presentation.

Ingredients

Scale
  • 6 large eggs: base for the deviled egg halves and filling
  • 3 tablespoons mayonnaise: adds creaminess and richness to the yolk filling
  • 1 teaspoon yellow mustard: brings tanginess and depth to the flavor
  • 1/4 teaspoon salt: enhances all the other flavors
  • 1/8 teaspoon black pepper: adds mild spice and balance
  • 1/2 teaspoon paprika: contributes smoky flavor and color
  • 2-3 drops orange food coloring (optional): gives the filling a pumpkin-like appearance
  • 1 green onion stalk: chopped into small pieces to create the “pumpkin stem” decoration

Instructions

  1. Place eggs in a pot, cover with water, and bring to a boil. Once boiling, turn off heat and let sit covered for 10-12 minutes. Then transfer to an ice bath.
  2. Peel the cooled eggs and slice them in half lengthwise.
  3. Gently remove the yolks and place them in a mixing bowl.
  4. Add mayonnaise, mustard, salt, pepper, and paprika to the yolks. Mix until smooth and creamy.
  5. Optional: Add a few drops of orange food coloring to enhance the pumpkin color and mix well.
  6. Transfer the yolk mixture to a piping bag with a round or star tip.
  7. Pipe the filling into each egg white half, building it up slightly to mimic a pumpkin shape.
  8. Use a toothpick to draw vertical lines on the filling to resemble pumpkin ridges.
  9. Insert a small piece of green onion into the top center of the filling to act as the pumpkin stem.
  10. Chill in the refrigerator until ready to serve.

Notes

  • You can prepare the yolk mixture and egg whites a day ahead and assemble before serving.
  • Use smoked paprika for a deeper flavor and natural color enhancement.
  • Greek yogurt can be used instead of mayonnaise for a healthier option.
  • Skip the food coloring if you prefer a more natural look.
