Ingredients
Scale
- 1 cup pumpkin puree
- 1 cup mashed potatoes
- 2 egg yolks
- 1 ½ cups all-purpose flour
- 1 tsp salt
- ½ tsp ground nutmeg
- 1 tbsp fresh sage, chopped
- 2 tbsp butter (for browning)
- Parmesan cheese (for serving, optional)
Instructions
- Prepare the pumpkin: If using fresh pumpkin, roast it until soft, scoop out the flesh, and mash it. If using canned pumpkin, ensure it’s pure with no added sugar or spices.
- Mix the dough: In a large mixing bowl, combine the pumpkin puree, mashed potatoes, egg yolks, salt, nutmeg, and flour. Stir until a dough forms. You may need to add more flour to get the right consistency.
- Roll the dough: On a floured surface, roll the dough into long ropes and cut it into 1-inch pieces. Use a fork to press each piece and form the classic gnocchi ridges.
- Cook the gnocchi: Bring a pot of salted water to a boil and drop the gnocchi in. Cook for 2-3 minutes, or until they float to the top. Remove with a slotted spoon.
- Prepare the sauce: In a skillet, melt butter over medium heat and sauté fresh sage leaves until crispy.
- Finish the gnocchi: Add the cooked gnocchi to the skillet with sage and toss gently in the brown butter until lightly browned. Serve with Parmesan cheese if desired.
Notes
- Test the dough: Before shaping all the gnocchi, cook one to check its texture. If it falls apart, add more flour.
- Chill the dough: If the dough is too soft to handle, chill it in the fridge for 30 minutes before rolling it out.
- Serve with various sauces: Pumpkin gnocchi pairs well with a brown butter sage sauce, creamy Parmesan sauce, or even a light drizzle of olive oil and herbs.
