Description

Pumpkin Marble Cake is a moist and flavorful vegan dessert that combines pumpkin spice flavors with rich chocolate swirls. This easy loaf cake features pumpkin puree, warm spices, and cocoa for a beautiful marbled effect, making it perfect for fall baking, holidays, or a comforting homemade treat.

Ingredients

Scale
  • 1 1/2 cups pumpkin puree: adds moisture, natural sweetness, and pumpkin flavor
  • 1 cup light brown sugar: provides sweetness and a caramel-like depth
  • 1/2 cup neutral flavored oil: keeps the cake soft and tender
  • 1/2 cup dairy-free milk: helps create the right batter consistency
  • 1/3 cup dairy-free yogurt: adds moisture and improves the cake texture
  • 1 tablespoon apple cider vinegar: helps create a lighter crumb
  • 2 teaspoons vanilla extract: enhances the overall flavor
  • 2 cups all-purpose flour: provides structure for the loaf cake
  • 2 teaspoons pumpkin pie spice: adds warm cinnamon, nutmeg, ginger, and clove flavors
  • 1 teaspoon baking powder: helps the cake rise
  • 1/2 teaspoon baking soda: supports leavening and texture
  • 1/2 teaspoon salt: balances the sweetness
  • 1/4 cup Dutch-process cocoa powder: creates the chocolate portion of the marble cake
  • 1 tablespoon espresso powder (optional): intensifies the chocolate flavor
  • Dairy-free chocolate and coconut cream (optional): used for chocolate ganache topping

Instructions

  1. Preheat the oven to 350°F (180°C) and line a loaf pan with parchment paper.
  2. Whisk pumpkin puree, brown sugar, oil, dairy-free milk, dairy-free yogurt, apple cider vinegar, and vanilla extract in a large bowl until smooth.
  3. Add flour, pumpkin pie spice, baking powder, baking soda, and salt. Mix gently until just combined to avoid overmixing.
  4. Divide the batter into two bowls. Add cocoa powder, optional espresso powder, and a small amount of dairy-free milk to one bowl and mix until smooth.
  5. Add alternating spoonfuls of pumpkin batter and chocolate batter into the prepared loaf pan.
  6. Use a knife to gently swirl the batters together to create a marble pattern without overmixing.
  7. Bake for 65 to 70 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool the cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Prepare optional chocolate ganache by melting dairy-free chocolate with coconut cream, then drizzle over the cooled cake before serving.

Notes

  • Use pure pumpkin puree instead of pumpkin pie filling for the best flavor and texture.
  • Do not overmix the batter after adding flour because it can make the cake dense.
  • For a gluten-free version, use a 1:1 gluten-free baking flour blend.
  • Store leftovers in an airtight container at room temperature for up to 1 day or refrigerate for up to 4 days.
  • The cake can be frozen in individual slices for up to 1 month.
  • Gently swirl the batter to maintain a clear pumpkin and chocolate marble pattern.
