Ingredients
Scale
- 1 1/2 cups (180g) graham cracker crumbs
- 1/2 cup (62g) chopped pecans
- 2 tablespoons (25g) granulated sugar
- 5 tablespoons (71g) unsalted butter, melted
- 1 can (15 ounces/425g) pure pumpkin
- 1 cup (200g) light or dark brown sugar
- 2 large eggs
- 1 1/2 cups (360ml) heavy cream
- 1 teaspoon pure vanilla extract
- 1 tablespoon cornstarch
- 1 1/2 teaspoons pumpkin pie spice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- Whipped cream, optional for serving
- Chopped pecans, optional for serving
Instructions
- Preheat the oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper, leaving enough overhang on the sides to lift out the finished bars.
- Add the graham crackers and pecans to a food processor and pulse until finely ground. A few small pieces of pecan are fine.
- Add the granulated sugar and melted butter and pulse until the crumb mixture is evenly moistened.
- Firmly press the mixture across the bottom and slightly up the sides of the prepared baking pan.
- Pre-bake the crust for 12 minutes. Remove it from the oven and keep the oven heated to 350°F (177°C).
- In a large mixing bowl, whisk together the pure pumpkin, brown sugar, eggs, heavy cream, vanilla extract, cornstarch, pumpkin pie spice, cinnamon, salt, and black pepper until smooth and evenly combined.
- Pour the pumpkin filling directly over the warm pre-baked crust and spread it evenly.
- Bake for 40 to 50 minutes, or until the edges and center are set and the middle no longer has a loose, liquid-like jiggle.
- Place the pan on a wire rack and allow the Pumpkin Pie Bars to cool completely at room temperature.
- Cover and refrigerate for at least 1 hour to allow the pumpkin custard to become firm enough for clean slicing.
- Use the parchment paper overhang to lift the chilled bars from the pan. Cut into 18 to 24 squares or rectangles with a sharp knife.
- Serve chilled, topped with whipped cream and chopped pecans if desired.
Notes
- Use pure canned pumpkin rather than prepared pumpkin pie filling for the most consistent texture and sweetness.
- Firmly compact the graham cracker crust to prevent it from crumbling when the bars are sliced.
- Do not skip pre-baking the crust; this helps set the crumbs and develops the toasted pecan flavor.
- The pumpkin filling can be prepared, covered, and refrigerated for up to 3 days before baking.
- For a nut-free crust, omit the pecans and add 1/4 cup (30g) additional graham cracker crumbs and 1 additional tablespoon (14g) melted butter.
- Digestive biscuits can be substituted for graham crackers when necessary.
- For neat slices, chill the bars thoroughly and wipe the knife clean between cuts.
- Store leftover bars covered in the refrigerator for up to 1 week.
- Cooled bars can be frozen for up to 3 months. Thaw overnight in the refrigerator before serving.
- Add whipped cream and other toppings shortly before serving for the freshest presentation.
