Description

Pumpkin Pie Cookies are a delicious fall dessert that combines a soft brown sugar spice cookie with a creamy pumpkin pie filling and fluffy whipped cream topping. These individual pumpkin desserts deliver all the cozy flavors of traditional pumpkin pie in an easy-to-serve cookie form, making them perfect for Thanksgiving, holiday baking, and autumn gatherings.

Ingredients

Scale
  • 1 cup unsalted butter, softened: creates a rich and tender cookie texture
  • 1 cup light brown sugar: adds moisture and caramel-like sweetness
  • 1/2 cup granulated sugar: balances sweetness and improves cookie structure
  • 1 large egg: binds ingredients and adds richness
  • 2 teaspoons pure vanilla extract: enhances overall flavor
  • 2 1/2 cups all-purpose flour: provides structure for the cookie base
  • 1 teaspoon baking powder: helps create a soft texture
  • 1/2 teaspoon baking soda: improves browning and texture
  • 1 teaspoon ground cinnamon: adds warm spice flavor
  • 1/2 teaspoon salt: enhances the sweetness and spices
  • 3/4 cup pumpkin puree: creates the creamy pumpkin filling
  • 1/3 cup brown sugar: sweetens the pumpkin pie filling
  • 1 large egg: helps set the pumpkin filling
  • 1/3 cup evaporated milk or heavy cream: adds richness and smoothness
  • 2 tablespoons all-purpose flour: thickens the pumpkin filling
  • 2 teaspoons pumpkin pie spice: provides classic fall flavors
  • 1 cup heavy whipping cream: creates the whipped cream topping
  • 2 tablespoons powdered sugar: sweetens the whipped topping
  • 1/2 teaspoon ground cinnamon: adds a finishing spice touch

Instructions

  1. Prepare the cookie dough by beating softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, then mix until fully combined and smooth.
  3. Whisk together flour, baking powder, baking soda, cinnamon, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
  4. Shape the dough into a log, wrap it, and refrigerate for at least 30 minutes to help the cookies maintain their shape.
  5. Slice the chilled dough and roll each piece into a ball. Place on prepared baking sheets with space between each cookie.
  6. Create a small indentation in the center of each dough ball to hold the pumpkin filling.
  7. Mix pumpkin puree, brown sugar, egg, evaporated milk or cream, flour, and pumpkin pie spice until smooth.
  8. Fill each cookie indentation with the pumpkin mixture.
  9. Bake until the cookie edges are lightly golden and the pumpkin filling is set. Allow cookies to cool before topping.
  10. Whip heavy cream with powdered sugar until medium-stiff peaks form. Add whipped cream on top of each cookie and sprinkle with cinnamon before serving.

Notes

  • Chill the cookie dough before baking to prevent excessive spreading.
  • Use pure pumpkin puree instead of pumpkin pie filling for the best flavor and texture.
  • Allow cookies to cool completely before adding whipped cream topping.
  • Store finished cookies in an airtight container in the refrigerator because of the creamy filling.
  • For a gluten-free option, use a gluten-free all-purpose flour blend.
