Description

Pumpkin Poke Cake is an easy and delicious fall dessert made with pumpkin puree, yellow cake mix, caramel filling, whipped topping, and crunchy toffee pieces. This moist pumpkin spice cake is perfect for Thanksgiving, potlucks, and holiday gatherings.

Ingredients

Scale
  • 1 box yellow cake mix: creates a soft and moist cake base
  • 1 can pumpkin puree: adds rich pumpkin flavor and moisture
  • 1 tablespoon pumpkin pie spice: provides warm fall spice flavor
  • 1 can sweetened condensed milk: creates a creamy sweet filling
  • 1 jar caramel sauce: adds buttery caramel sweetness
  • 1 container whipped topping: creates a light and creamy topping
  • 1 teaspoon cinnamon: enhances the pumpkin spice flavor
  • 4 Heath or Skor candy bars: adds crunchy toffee and chocolate topping

Instructions

  1. Preheat the oven to 350°F and prepare a 9×13-inch baking pan with cooking spray.
  2. Combine the yellow cake mix, pumpkin puree, and pumpkin pie spice in a mixing bowl until the batter is smooth.
  3. Spread the batter evenly into the prepared pan and bake for 35 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool completely before poking holes across the surface using the handle of a wooden spoon.
  5. Mix the sweetened condensed milk with half of the caramel sauce and pour it over the cake, allowing the filling to soak into the holes.
  6. Refrigerate the cake for about 1 hour to let the flavors combine.
  7. Mix whipped topping with cinnamon and spread it evenly over the chilled cake.
  8. Sprinkle crushed Heath or Skor candy pieces over the top and drizzle with the remaining caramel sauce before serving.

Notes

  • Use pure pumpkin puree instead of pumpkin pie filling for the best texture and flavor.
  • Allow the cake to cool completely before adding the filling to prevent a soggy texture.
  • Store leftovers covered in the refrigerator for up to 5 to 7 days.
  • The cake can be prepared ahead of time and chilled overnight for better flavor.
  • Homemade whipped cream can be used instead of whipped topping.
