Description

Pumpkin Praline Cookies are soft, moist fall cookies made with pumpkin puree, warm pumpkin pie spices, brown sugar, and topped with a rich praline frosting with chopped pecans. These homemade pumpkin cookies are perfect for autumn gatherings, Thanksgiving desserts, or a cozy seasonal treat.

Ingredients

Scale
  • 1 cup unsalted butter: creates a rich, tender cookie texture and adds buttery flavor
  • 1 cup granulated sugar: provides sweetness and helps with cookie structure
  • 1/2 cup light brown sugar: adds moisture and caramel-like flavor
  • 1 large egg: binds the ingredients and supports a soft texture
  • 1 teaspoon vanilla extract: enhances the overall flavor
  • 1 cup pumpkin puree: provides pumpkin flavor and keeps cookies moist
  • 1 teaspoon baking soda: helps the cookies rise
  • 1/2 teaspoon kosher salt: balances sweetness and enhances flavor
  • 2 teaspoons pumpkin pie spice: adds warm cinnamon, nutmeg, and seasonal spice notes
  • 2 cups all-purpose flour: provides structure for the cookie dough
  • 1/4 cup unsalted butter (for praline frosting): creates a smooth buttery topping
  • 1/4 cup heavy cream: makes the frosting rich and creamy
  • 1/2 cup light brown sugar (for praline frosting): adds caramel sweetness
  • 1/4 teaspoon salt (for praline frosting): balances the frosting flavor
  • 1 teaspoon vanilla extract (for praline frosting): adds aroma and sweetness
  • 1 cup powdered sugar: thickens and smooths the praline frosting
  • 1/2 cup chopped pecans: adds crunch and classic praline flavor

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the butter, granulated sugar, and brown sugar together until light and fluffy, about 2 minutes.
  3. Add the egg, vanilla extract, and pumpkin puree, then mix until fully combined.
  4. Mix in the baking soda, salt, and pumpkin pie spice until evenly distributed.
  5. Gradually add the flour and mix just until the dough comes together. Avoid overmixing.
  6. Scoop the cookie dough onto the prepared baking sheets, leaving space between each cookie.
  7. Bake for 9 to 11 minutes until the tops are set but the centers remain soft.
  8. Prepare the praline frosting by heating butter, heavy cream, brown sugar, salt, and pumpkin pie spice in a saucepan until boiling.
  9. Boil the frosting mixture for 1 minute, remove from heat, then whisk in vanilla extract and powdered sugar until smooth.
  10. Stir in chopped pecans and spread the warm praline frosting over the cookies before serving.

Notes

  • Use room-temperature butter for the best cookie texture.
  • Do not overbake the cookies to keep them soft and tender.
  • Measure flour carefully to avoid dry cookies.
  • The praline frosting can be added after baking or prepared shortly before serving.
  • Store cookies in an airtight container at room temperature for several days.
  • Freeze cookies without frosting for longer storage and decorate after thawing.
