Description

This Pumpkin Shaped Cheeseball is a festive, creamy appetizer perfect for fall gatherings, Halloween parties, or Thanksgiving tables. It’s made with cream cheese, ranch seasoning, fresh vegetables, and sharp cheddar cheese, all shaped to look like a pumpkin. Easy to prep ahead and sure to impress your guests.

Ingredients

Scale
  • 8 oz cream cheese: provides the creamy base and structure
  • 8 oz vegetable cream cheese: adds flavor and texture depth
  • 2 tablespoons Hidden Valley Spicy Ranch mix: gives a flavorful, tangy kick
  • 3 green onions (green parts only), sliced: adds freshness and mild onion flavor
  • 1 red bell pepper, finely diced (save stem): adds crunch and color
  • 2 cups shredded sharp cheddar cheese, divided: gives sharp cheesy flavor and forms the outer pumpkin coating

Instructions

  1. Finely chop the red pepper and slice the green onions. Reserve the red pepper stem for garnish.
  2. In a mixing bowl or stand mixer, combine cream cheese and vegetable cream cheese until smooth.
  3. Add the ranch seasoning mix and blend until fully incorporated.
  4. Fold in chopped green onions and red bell pepper.
  5. Stir in 1 cup of shredded cheddar cheese into the mixture.
  6. On a large sheet of plastic wrap, sprinkle 1/4 cup of the remaining cheddar cheese in the center.
  7. Place the cheese mixture on top, then cover it with the remaining shredded cheese.
  8. Wrap tightly with two layers of cling wrap and shape into a ball.
  9. Use four large rubber bands or kitchen twine to create pumpkin-like indentations.
  10. Refrigerate for at least 2 hours or overnight to set the shape and flavor.
  11. Before serving, remove the plastic wrap and rubber bands, and insert the red pepper stem into the top center.
  12. Serve with crackers, pretzels, or vegetable sticks.

Notes

  • Use freshly shredded cheese for best texture and stickiness.
  • Wrap the pepper stem in a damp paper towel and refrigerate to keep it fresh until serving.
  • Rubber bands or kitchen twine both work for shaping, but ensure it’s tightly wrapped to avoid leakage.
  • Flavor improves after chilling, so making it a day ahead is recommended.
