- 1 red bell pepper, finely diced (save stem): adds crunch and color
- 2 cups shredded sharp cheddar cheese, divided: gives sharp cheesy flavor and forms the outer pumpkin coating
Instructions
- Finely chop the red pepper and slice the green onions. Reserve the red pepper stem for garnish.
- In a mixing bowl or stand mixer, combine cream cheese and vegetable cream cheese until smooth.
- Add the ranch seasoning mix and blend until fully incorporated.
- Fold in chopped green onions and red bell pepper.
- Stir in 1 cup of shredded cheddar cheese into the mixture.
- On a large sheet of plastic wrap, sprinkle 1/4 cup of the remaining cheddar cheese in the center.
- Place the cheese mixture on top, then cover it with the remaining shredded cheese.
- Wrap tightly with two layers of cling wrap and shape into a ball.
- Use four large rubber bands or kitchen twine to create pumpkin-like indentations.
- Refrigerate for at least 2 hours or overnight to set the shape and flavor.
- Before serving, remove the plastic wrap and rubber bands, and insert the red pepper stem into the top center.
- Serve with crackers, pretzels, or vegetable sticks.
