Description

  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper (adjust to taste)
  • 2 cups cranberry sauce (homemade or packaged)
  • 1 cup tomato ketchup
  • 3 tablespoons packed brown sugar
  • 1 tablespoon freshly squeezed lemon juice


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground pork, breadcrumbs, eggs, ketchup, Worcestershire sauce, parsley, salt, and pepper. Mix until fully incorporated.
  3. Wet your hands to prevent sticking and form the mixture into medium-sized meatballs (about 32 meatballs total).
  4. Place meatballs on the prepared baking sheet and bake for 20-25 minutes, or until a meat thermometer reads 160°F (71°C).
  5. While meatballs are baking, prepare the sauce by combining cranberry sauce, ketchup, brown sugar, and lemon juice in a skillet. Cook over medium heat until it starts to boil, then reduce heat.
  6. Once meatballs are fully cooked, add them to the sauce and simmer until heated through, stirring occasionally.
  7. Serve hot, garnished with chopped parsley if desired.
