- 1 cup quinoa, rinsed
- 2 tablespoons olive oil
- 1 medium onion, finely diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 cups water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup cucumber, diced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1/4 cup toasted pine nuts
Instructions
- Rinse the quinoa thoroughly under cold running water and drain well.
- Heat the olive oil in a medium saucepan over medium heat.
- Add the onion and cook for 4 to 5 minutes until softened.
- Stir in the bell pepper and cook for 3 minutes.
- Add the garlic and cook for 30 seconds until fragrant.
- Add the quinoa and stir for 1 to 2 minutes to lightly toast it.
- Pour in the water and season with salt and black pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover.
- Simmer for 15 to 18 minutes until the liquid is absorbed and the quinoa is tender.
- Remove from heat and let stand covered for 5 minutes.
- Fluff the quinoa with a fork.
- Fold in the cucumber, parsley, mint, and toasted pine nuts.
- Serve warm, at room temperature, or chilled.
Notes
- Rinsing quinoa helps remove any bitter flavor.
- Toast the quinoa before adding liquid for a richer, nuttier taste.
- Vegetable broth can be substituted for water if desired.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
