Description

This Red Hot Cinnamon Hard Candy is an old-fashioned holiday favorite made with sugar, corn syrup, and cinnamon oil.   • 4 cups granulated sugar – for sweetness and structure
  • 1 cup light corn syrup – prevents crystallization and adds smooth texture
  • 1 cup purified water – dissolves sugar evenly
  • 1 teaspoon red food coloring – for festive color
  • 1 teaspoon cinnamon candy oil – adds bold cinnamon flavor
  • 1 cup powdered sugar – to coat and prevent sticking


Instructions

  1. Grease a 15x10x1-inch baking sheet or jelly roll pan with butter. Line it with parchment paper and butter the paper.
  2. In a large saucepan, combine sugar, corn syrup, water, and red food coloring. Stir to mix.
  3. Cover and bring the mixture to a boil over medium heat. Once boiling, remove the lid and continue boiling for 3 minutes, stirring occasionally.
  4. Insert a candy thermometer and cook until the mixture reaches 300°F (hard crack stage). Do not stir during this stage.
  5. When the temperature is close, remove briefly from heat to stir, then return and heat until it reaches exactly 300°F.
  6. Remove from heat and quickly stir in the cinnamon oil. Work in a well-ventilated area as the aroma is strong.
  7. Pour the hot mixture into the prepared pan and let it cool for 1.5 to 2.5 hours until hardened.
  8. Sprinkle powdered sugar on top, flip the candy, and sprinkle the other side.
  9. Wrap a hammer head in a bag and gently break the candy into bite-sized pieces.
  10. Re-coat edges with powdered sugar if desired, or leave glossy for a clean look.

Notes

  • Use 1.5 to 2 teaspoons of cinnamon oil for a stronger cinnamon flavor.
  • For thinner candy, use a larger pan; it spreads more and hardens faster.
