Red White & Blue Tortilla Cups are festive individual desserts featuring crispy cinnamon-sugar tortilla shells filled with a light cream cheese and whipped topping mixture, then topped with fresh strawberries and blueberries. - 10 (6-inch) flour tortillas
- 3 tablespoons granulated sugar
- 2 teaspoons ground cinnamon
- Nonstick cooking spray, as needed
- 1 (8-ounce) package cream cheese, softened
- 2 cups whipped topping or fresh whipped cream
- 1 package strawberries, washed and halved (about 1 pound)
- 1 cup blueberries, washed
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, combine the sugar and ground cinnamon until evenly mixed.
- Lightly coat one side of each tortilla with nonstick cooking spray and sprinkle with the cinnamon-sugar mixture.
- Turn the tortillas over, spray the other side, and sprinkle with the remaining cinnamon sugar.
- Cut each tortilla into 4 equal wedges.
- Place one tortilla wedge into a muffin cup with the rounded edge along the bottom. Add a second wedge, overlapping slightly, to form a cup shape.
- Repeat with the remaining tortilla wedges until all muffin cups are filled.
- Bake for 10 minutes or until crisp and lightly golden brown.
- Allow the tortilla cups to cool completely in the muffin pan.
- In a mixing bowl, beat the softened cream cheese until smooth and creamy.
- Gently fold in the whipped topping or fresh whipped cream until fully combined.
- Carefully remove the cooled tortilla cups from the pan.
- Spoon or pipe about 3 tablespoons of filling into each tortilla cup.
- Top each cup with one strawberry half and a few blueberries.
- Refrigerate until ready to serve.
