This hot and cheesy Reuben Dip is a crowd-pleasing appetizer that brings all the flavors of the classic deli sandwich into a creamy, scoopable form. - 1 cup real mayonnaise
- 2/3 cup Thousand Island dressing
- 4 oz chive and onion cream cheese, softened
- 1 cup sauerkraut, rinsed and drained well
- 6 oz deli corned beef, chopped
- 2 cups shredded Swiss cheese
- 1 tsp chopped fresh chives (for garnish)
- Rye bread, crackers, or crostini (for serving)
Instructions
- Preheat oven to 350°F (175°C). Lightly spray a 1.5-quart baking dish with non-stick spray.
- In a large bowl, use an electric mixer to blend mayonnaise, Thousand Island dressing, and cream cheese until smooth.
- Rinse and drain sauerkraut thoroughly, then squeeze out excess moisture using a clean towel.
- Add sauerkraut, chopped corned beef, and 1½ cups of shredded Swiss cheese to the bowl. Stir until fully combined.
- Spread the mixture evenly in the prepared baking dish. Top with the remaining ½ cup of shredded Swiss cheese.
- Bake for 30 minutes, or until bubbly and golden brown on top.
- Remove from oven and garnish with chopped fresh chives.
- Serve hot with rye bread, crackers, or crostini.
Notes
- Drain sauerkraut well to avoid a watery dip.
- This dip can be assembled ahead and refrigerated overnight.
