Description

This hot and cheesy Reuben Dip is a crowd-pleasing appetizer that brings all the flavors of the classic deli sandwich into a creamy, scoopable form. Made with corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing, it’s the perfect party starter for game days, holidays, or any festive gathering.

  • 1 cup real mayonnaise
  • 2/3 cup Thousand Island dressing
  • 4 oz chive and onion cream cheese, softened
  • 1 cup sauerkraut, rinsed and drained well
  • 6 oz deli corned beef, chopped
  • 2 cups shredded Swiss cheese
  • 1 tsp chopped fresh chives (for garnish)
  • Rye bread, crackers, or crostini (for serving)


Instructions

  1. Preheat oven to 350°F (175°C). Lightly spray a 1.5-quart baking dish with non-stick spray.
  2. In a large bowl, use an electric mixer to blend mayonnaise, Thousand Island dressing, and cream cheese until smooth.
  3. Rinse and drain sauerkraut thoroughly, then squeeze out excess moisture using a clean towel.
  4. Add sauerkraut, chopped corned beef, and 1½ cups of shredded Swiss cheese to the bowl. Stir until fully combined.
  5. Spread the mixture evenly in the prepared baking dish. Top with the remaining ½ cup of shredded Swiss cheese.
  6. Bake for 30 minutes, or until bubbly and golden brown on top.
  7. Remove from oven and garnish with chopped fresh chives.
  8. Serve hot with rye bread, crackers, or crostini.

Notes

  • Drain sauerkraut well to avoid a watery dip.
  • This dip can be assembled ahead and refrigerated overnight.
