Description

Rhubarb Crunch is a classic sweet and tangy dessert featuring layers of buttery brown sugar oatmeal crumble and a gooey rhubarb filling. Perfect for spring and summer, this easy baked treat is delicious served warm with ice cream or chilled the next day.

  • 1 cup all-purpose flour
  • 3/4 cup quick-cooking oatmeal
  • 1 cup brown sugar
  • 1/2 cup melted butter
  • 1 teaspoon ground cinnamon
  • 4 cups diced rhubarb (fresh or frozen, thawed and drained)
  • 1 cup granulated white sugar
  • 1 cup water
  • 2 tablespoons cornstarch
  • 1/2 cup vanilla ice cream or whipped cream (optional, for serving)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a medium bowl, mix flour, oatmeal, brown sugar, melted butter, and cinnamon until crumbly.
  3. Press half of the crumble mixture firmly into the bottom of the prepared baking dish to form a crust.
  4. Spread the diced rhubarb evenly over the crust layer.
  5. In a saucepan, combine granulated sugar, water, and cornstarch. Cook over low heat, stirring constantly, until thickened and clear.
  6. Pour the hot sugar mixture evenly over the rhubarb layer.
  7. Sprinkle the remaining crumble mixture over the top.
  8. Bake for 60 minutes or until the top is golden brown and the filling is bubbling.
  9. Allow to cool slightly before serving. Serve warm with vanilla ice cream or whipped cream if desired.

Notes

  • If using frozen rhubarb, thaw completely and drain excess liquid before using.
  • Do not squeeze the rhubarb, just allow natural draining to avoid mushy texture.
  • Let the dessert rest for at least 15 minutes after baking to help the filling set.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
