- 1 cup granulated white sugar
- 1 cup water
- 2 tablespoons cornstarch
- 1/2 cup vanilla ice cream or whipped cream (optional, for serving)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a medium bowl, mix flour, oatmeal, brown sugar, melted butter, and cinnamon until crumbly.
- Press half of the crumble mixture firmly into the bottom of the prepared baking dish to form a crust.
- Spread the diced rhubarb evenly over the crust layer.
- In a saucepan, combine granulated sugar, water, and cornstarch. Cook over low heat, stirring constantly, until thickened and clear.
- Pour the hot sugar mixture evenly over the rhubarb layer.
- Sprinkle the remaining crumble mixture over the top.
- Bake for 60 minutes or until the top is golden brown and the filling is bubbling.
- Allow to cool slightly before serving. Serve warm with vanilla ice cream or whipped cream if desired.
Notes
- If using frozen rhubarb, thaw completely and drain excess liquid before using.
- Do not squeeze the rhubarb, just allow natural draining to avoid mushy texture.
- Let the dessert rest for at least 15 minutes after baking to help the filling set.
